Yassa (with chicken or fish)

Yassa is one of the most well-known dishes outside of Senegal. There are several types of yassa; Chicken Yassa, Fish Yassa or Meat (Beef) Yassa. It’s mainly an onion-based dish.

Ingredients

2Medium sea breamfish or 1 whole chicken

15 cl of oil

Vinegar

1 lime

Mustard

Salt, Pepper,Chili powder, 2 Fish stock cubes

3 garlic cloves

½ greenpeppers

500 g rice

3 Boiled Eggs, Tomatoes, 1 Cucumber(for chicken dish)

Accompaniment:1 kgWhite Rice

500 g Onions

 

 

How to make it

  1. Wash and cut fish in large vertical slices

    To prepare marinade for fish: combine 2 garlic cloves and add 1 Tb of mustard, 1 Tb of vinegar and ½ squeezed limes. Add crushed fish stock cubes, 1 pinch of salt, chili powder and pepper. Mix well.

    Marinate the fish in the mix above. Leave to marinate for a couple of minutes

    Cut onions

    To marinate the onions: mix 1 Garlic clove. Add a pinch of salt; add 2 Tb of mustard, 2 Tb of vinegar and ½ squeezed limes. Add crushed fish stock cubes, 1 pinch of salt, chili powder and pepper. Mix in the onions and leave to sit.

    Prepare your rice

    While waiting for rice to cook: add oil to pan and fry fish on both sides until golden brown. Take off the pan and add the marinated onions in the oil that was used to fry the fish until golden. Stir regularly for 2-3 mins and ensure the sauce does not stick.

    When reaching 10 mins, the onions will be a golden brown, pour in the rest of the sauce, add 1 cup of water. Cut ½ green pepper in long slices. Add the sauce. Stir at low heat for 10 mins.

    Serve with white rice, fresh, raw tomatoes, boiled eggs and cucumber slices.
