|Ripe and very soft plantains|
|Self raising flour|
|Palm oil or canola oil for frying, Onion, Cayenne pepper|
How to make it
- Peel and thoroughlymash the plantains.
- Put into a bowl and add the flour to bind.
- Add the onion, salt and pepper to taste.
- Mix well and leave to stand for 20 minutes.
- Fry in spoonfuls in a little hot oil until golden brown.
- Drain on kitchen paper and serve hot.
How to serve:
Normally served withbeans, or as a side dish withjollof or waakye.
