Ingredients
6 Sweet potatoes
Vegetable oil
Onions
Kpakpo shito
White fish
Carrot
Green pepper
Red pepper
Tomatoes
Salt to taste
Seasoning
Directions
Sweet Potatoes
Peel the sweet potato and cut into thin slices.
Heat the oil in a large non-stick frying pan over medium-high heat.
Add the sweet potato slices to the frying pan. Let it fry whilst stirring every 2 minutes, for 10 minutes, or until sweet potatoes are browned and cooked through.
Onion Sauce
Peel and wash onions, cut onions add to the kpakpo shito and blend with little water.
Put sauce pan with oil on fire and add the onion mixture to cook.
Leave to cook for about 45 minutes.
Add seasoning, salt and leave to cook.whiles cooking cut your vegetables ;red pepper ,tomato ,green pepper and carrot into small dice.
Serve with your fried fish or other type of protein and add other vegetables.
