Shito is the name given to black pepper in Ga, a tribe in Accra, Ghana. This sauce which is usually spicy is enjoyed with kenkey and banku. Making shito from scratch can be a challenge, but follow our step-by-step guide and you'll be done in no time;

Ingredients

½ cup shrimp powder

1 litre canola oil

¼ cup grind garlic

½ cup dry pepper

1 cup grind ginger

1 cup dried smoked fish powder

1 small tomato paste

3 cups grind onions

Hutwise special seasoning

Salt

Maggi cube
Directions
Put half of the oil in a pan, add onion, ginger, garlic, tomatoes, salt and Maggie
Let it cook for 25 minutes. Stir to prevent it from burning.
As sauce cooks and the water in the ingredients dry out, add hutwise special seasoning, fish powder, and shrimp powder
Cook for another 15 minutes stirring in-between
Add dry pepper and add the rest of oil if necessary
Cook till the color of the sauce darkens
Let it simmer for 5 minutes
