Kenkey with Smoked Mackerel and Avocado

Making hot smoked mackerel fish is an overnight process. Therefore, you would have start work the night before if you want to enjoy some kenkey and smoke fish the next day. Going through the process of smoking fish and kenkey from scratch can be very stressful and strenous. However, you can save yourself some time by just purchasing some kenkey and smoked mackerel from Hutwise.

Ingredients

 Kenkey
Smoked Mackerel
Fresh tomatoes, onions, spicy pepper, avocado

 

How to Make It

  1. Heat the smoked mackerel in a microwave for about 2 minutes.

  2. Kenkey is best eaten hot, so microwave the kenkey ball for 5 to 10 minutes, or boil in hot water for 10 minutes. Remove, peel, and cut into pieces.

  3. Take fresh tomatoes, fresh onions, spicy pepper (habanero preferred) . Cut into pieces, and pulse in your blender for 1 to 2 minutes. You must allow it to be cut up, but not too fine. Scoop into your serving plate or bowl.
  4. Open the tin of sardines, add to the pepper sauce.
  5. Cut up avocados, add to the sauce. 
  6. Enjoy with your finest beer or cocktail. 

Now, that's what we call comfort food!
