Kenkey with Fish and Sardines
Kenkey is best eaten hot, so microwave the kenkey ball for 5 to 10 minutes, or boil in hot water for 10 minutes. Remove, peel, and cut into pieces.
Take fresh tomatoes, fresh onions, spicy pepper (habanero preferred). Cut into pieces, and pulse in your blender for 1 to 2 minutes. You must it to be cut up, but not too fine. Scoop into your serving plate or bowl.
Open the tin of sardines, add to the pepper sauce. Cut up avocados, add to the sauce.
Enjoy with your finest beer or cocktail.
