Ingredients
- Chopped Fisheg.Tilapia ,Red Fish etc.
- 6 medium sized tomatoes
- 5 medium sized onions
- 15 small red bell peppers
- 100 ml red palm oil
- 5 garlic cloves
- 1tbsp ginger paste
- 4 - 5 bouillon cubes/ stock cubes
- salt (to taste)
- 1 small tin tomatopaste , ( 2tbsp)
- chopped okra (optional)
- Chop the 4 peeled onions into medium sized chunks. Add into the cooking pan with tomatoes and red bell peppers over high heat. * Wash vegetables before using.* Allow to boil for 20 minutes.
- Remove only the tomatoes and the red bell peppers into your blender and blend. * Do not add extra water*
- Pour tomato and red bell pepper mixture into a sieve and separate mixture from seeds into a bowl.
- *Do not rinse out the blender container* Blend the cooked onions, garlic cloves, ginger and a little water from the cooking pan originally used to cook the vegetables in STEP 2. Transfer into another bowl.
- *TIP* Fetch out all the remaining water used to cook in STEP 2 into BOWL 3. *TIP*This will be our water bank because of the rich nutrients already in it. This is better than using fresh water.
- Set on your stove the cooking pan again and add 100ml palm oil/vegetable oil with 1 medium sliced (preferable size) onion. Allow to fry for 5 MINS
- Add blended mixture of onions, ginger and garlic into the cooking pan. Allow to cook for 5 MINS.
- Add the blended mixture of the tomatoes and pepper into the cooking pan. ** NO SEEDS** Allow to cook for 10 MINS over low heat while performing STEPS 10 -12
- **TIP** Pour the water in BOWL 3 over the seeds to get some more flavor and sieve out the water from the seedsinto BOWL
- Add 4 - 5 bouillon cubes/stock cubes (preferable amount) into BOWL 4. *I prefer Shrimp flavored cubes*
- Add mixture in BOWL 4 into the cooking pan (soup). *If too thick add a little water* Allowto cook for 5 MINS.
- Addyour chopped choice of fish into the cooking pan (soup). Allow to cook for 30 MINS. * Check to see if fish is cooked but not too soft. We don't want a scattered fish soup* *Add fresh green red bell peppers if you prefer achili hot fish soup.
- Allow to cool. ENJOY!
