Ingredients
- 4 ripe soft plantains
- 1 medium ginger root
- 1 Habanero pepper
- 2/3All purpose flour
- 4 cups vegetable oil
- 2 small white onions
- Peel and mash plantain until texture has even consistency
- Blend onions, peppers and ginger in a food processor
- Add blended spices to mashed plantains and mix well
- Add flour slowly to mashed plantains to bind the mixture
- Marinate for 30 - 40 minutes
- Pour oil in a pot and heat on medium high for 5 to 7 minutes
- Use a medium-sized ladle to scoop plantain mixture into hot oil
- Fry each side for 3 minutes or until golden brown
- Remove cookedtatalé and place on sheet
- Repeat steps 7, 8, and 9 with remaining plantain mix
