How to make the best Tatalé (Plantain Cakes)


  • 4 ripe soft plantains
  • 1 medium ginger root
  • 1 Habanero pepper
  • 2/3All purpose flour
  • 4 cups vegetable oil
  • 2 small white onions
  1. Peel and mash plantain until texture has even consistency
  2. Blend onions, peppers and ginger in a food processor
  3. Add blended spices to mashed plantains and mix well
  4. Add flour slowly to mashed plantains to bind the mixture
  5. Marinate for 30 - 40 minutes
  6. Pour oil in a pot and heat on medium high for 5 to 7 minutes
  7. Use a medium-sized ladle to scoop plantain mixture into hot oil
  8. Fry each side for 3 minutes or until golden brown
  9. Remove cookedtatalé and place on sheet
  10. Repeat steps 7, 8, and 9 with remaining plantain mix
