Groundnut soup, Rice and Broccoli

 

Ingredients

½ cup Peanut butter paste
1 tablespoon paprika, 1 medium,
¼ cup oil, onion, 2-3 pounds chicken, 
2 cups of rice, 3 tablespoons parsley,
2 tomatoes, 4 garlic cloves, salt and pepper to taste, broccoli


How to Make it

  1. Season chicken with paprika, ½ onions, salt and pepper. Set aside
  2. In a large pot, heat oil over low heat, then add the chicken and sauté stirring, frequently, any browned bits off the bottom of the pot.
  3. Blend tomatoes, onions, garlic, parsley and onions. Pour the mixture in the pot of chicken bring to a boil and let it simmer until tender (depending on the chicken).
  4. Add the peanut butter and 2 cups of water. Let it simmer for 5 minutes.
  5. Adjust the soup thickness with water if necessary .if not, return your soup to the heat and let simmer to desired thickness
  6. Drip a little soup from your stirring spoon. If you are satisfied with the thickness of your soup, serve it.
  7. Pour water (for every cup of rice, use 1¾ cups of water) into a large saucepan with a tight-fitting lid. Bring to a boil. Mix 1 teaspoon salt into the water.
  8. Add rice to the boiling water.
  9. Use a wooden spoon to separate any clumps. Don’t over-stir: That can cause the rice to become sticky.
  10. Be sure the lid fits tightly on the pot. Turn down the heat to its lowest setting. Let rice simmer for about 18 minutes, then remove from heat and allow the rice to steam in the pot for another 5 minutes.
  11. Just before serving, gently fluff the rice with a fork to separate the grains.
  12. Wash broccoli and put in a pan of boiling water for about 5 minutes.

      

Serve rice with groundnut soup and broccoli. Remember to serve hot.
