Binch Akara (Deep fried fritters)

Ingredients

1 pound black-eyed beans  Image result for black eyed beans
1 small onion, very finely chopped Image result for chopped onion
2 cups oil Image result for cup of oil
2 tsp. salt

 

 

How to make it

  1. Pour beans into a large bowl and add water. Stir until skins
    float.
  2. Strain into colander; allow all skin and eyes to flow out.
  3. Blend beans, onion and pepper. Pour in a bowl, add salt, and stir with a wooden spoon for two minutes.
  4. Heat oil until moderately hot. Drop mixture into oil with spoon. Fry until
    golden brown.
  5. Drain on absorbent paper. Small balls can be served with toothpicks.
