Best beef and chicken jollof rice

Ingredients

  • For the Beef & Chicken;
  • ½ Pound Beef Fillet (Shredded)
  • 1 Large Chicken Thigh (Deboned & Shredded)
  • 1 Medium Onion (Diced)
  • 1 Stalk Fresh Rosemary
  • 1 Tsp Ground Black Pepper
  • 4 Cloves of Garlic (Minced)
  • 1 Small Ginger (Grated)
  • 1 ½ Tsp Salt
  • For the Jollof Rice;
  • 6 Medium Tomatoes (Chopped)
  • 1 Cup Petite Belle Pepper
  • 1 Medium Red Onion (Chopped)
  • 6 Cloves of Garlic
  • 1 Large White Onion
  • 1 Tsp Fennel Seeds
  • 200g Tomato Paste
  • 1 Tsp Curry Powder
  • 1 Tsp Ground Rosemary
  • 1 Tsp Ground Black Pepper
  • 2 Cups Long Grain Rice (Washed)
  • 1 Tbsp Salt
  • 200ml Vegetable Oil

Directions

  1. Pour the shredded beef fillet and chicken into a saucepan over medium heat. Add onion, fresh rosemary, black pepper, garlic, ginger, salt, water, stir and boil for 20 minutes.
  2. Blend tomatoes, petite belle pepper, onion and garlic into a smooth mixture and set aside.
  3. Heat vegetable oil in a saucepan over medium heat, add the cooked beef and chicken and fry for 3 minutes. Take out and set aside.
  4. Pour the sliced onion into the same oil, add fennel seeds and stir until the onion is translucent.
  5. Then add the tomato paste, stir and let simmer for 5 minutes.
  6. Add the blended mixture, stir and let it simmer for 15 minutes.
  7. Add the curry powder, ground rosemary, black pepper, stir and let simmer for a minute.
  8. Add the washed rice, salt the chicken and beef stock, stir, cover and let cook for 30 minutes, stirring occasionally.
  9. Add the fried chicken and beef, diced red bell pepper, stir in and let cook for 5 minutes.
  10. Beef and chicken jollof rice ready to serve.
