Okro Stew is a very slimy type of stew which usually goes with most heavy meals. Best eaten with banku, the soup can also be enjoyed with gari eba.

Ingredients

Palm oil

Fish seasoning

Okro

Tomatoes

Red fish

Garlic

Directions
Remove all scales from fish and cut in desirable sizes.
Wash the fish and get rid of all gills.
Blend ginger, garlic and onion in a blender.
Boil pepper and tomatoes in water until the skin becomes soft.
Blend boiled pepper and tomatoes
Steam fish with blended garlic, ginger and onion.
Add salt and fish seasoning to taste.
After 3 minutes, add pepper and tomatoes mixture and wait for it to cook.
Wash okro and chopped into small pieces.
Add water and allow okro to cook for 5-10 minutes. The mixture should turn gooey and bubbly.
Add okro to fish soup. Then add teaspoons of palm oil and allow to simmer for 3 minutes.
